How should I prepare my peppers and onions?

For this recipe, you will want your peppers and onions in thin slices. We have found that for fajitas, thin slices are best, because you can decide how much pepper and onion you want, compared to your meat ratio.

If you like more peppers and onions, you can add more slices, but I prefer more meat, with just a little bit of pepper and onion.

My husband piles it all on and like to make his into a burrito, pretty much.

Slow Cooker Flank Steak Fajitas Recipe

These Slow Cooker Flank Steak Fajitas are one of the easiest, most delicious meals I have ever made!

Ingredients

  • 1 ½ teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 ½ pounds flank steak
  • 2 Tablespoons low sodium soy sauce
  • 1 jalapeno seeded and chopped
  • 2 teaspoons minced garlic
  • 4 red bell peppers diced
  • 1 onion diced
  • 6 flour tortillas
  • 1 cup shredded cheddar cheese optional topping
  • 2 avocados diced, optional topping
  • ½ cup sour cream optional topping
  • 2 limes juiced
  • ¼ cup cilantro chopped, optional topping

Instructions

  • In a small bowl, combine the chili powder, cumin, coriander, salt and pepper.

  • Rub the spice mixture over all sides of the flank steak, place it in the bottom of the slow cooker, and add the soy sauce.

  • Top the flank steak with the jalapeno, garlic, bell peppers, and onion. There's no need to add any water or other liquid.

  • Cook on high for 5 to 6 hours or on low for 8-9 hours, or until the steak can easily be shredded with two forks.

  • Thoroughly drain the meat and peppers, shred the meat and serve on tortillas with toppings or the fixings of your choice.

Notes

To turn this into a freezer meal:

In a small bowl, combine the chili powder, cumin, coriander, salt and pepper. Rub the spice mixture over all sides of the flank steak, place it in a gallon-sized freezer bag, and add the soy sauce, jalapeno, garlic, bell peppers, and onion. Close the bag and squeeze out as much air as possible and seal bag closed. Place freezer bag into freezer and it will last 60-90 days. When ready to use, spray inside of slow cooker with non-stick cooking spray and dump ingredients from bag into slow cooker. Place the lid on top and cook for 8-10 hours on low heat (you can cook it for 5-6 hours on high heat, but it will not be as tender as cooking it low and slow. We highly recommend low and slow!). Follow the rest of the instructions as written.

    For the green bell peppers and onions, I don't see any directions on how they are to be prepared. I know the bell peppers need to be seeded. But before I put them in the slow cooker, what is recommended please? Sliced? And are the onions to be in wedges, or sliced? Thanks.
