I eat oatmeal with Caleb every morning for breakfast. It’s our thing. We invite Josh to our oatmeal party, but he rarely attends:) He would rather eat cold cereal or toast. Josh will sit down to watch cartoons though. I think he likes Curious George and Dinosaur Train more than Caleb does:)

When we go out for breakfast, it’s a different story. I never order oatmeal. I don’t want to be boring and oatmeal is kind of boring. I love it, but when we go out, I am ready to splurge. I usually ask Josh one hundred times if I should get French toast or pancakes, hoping that he will get the hint and order one of them so I can have both. He sometimes plays along:) I almost always end up ordering French toast. It is just too good to pass up!

I think Sunday will be a French toast day at our house. It’s Mother’s Day and that means I can splurge. I don’t want to go out because I would rather be lazy and eat breakfast in my pj’s. I am putting Baked French Toast Muffins on the menu for Mother’s Day. Josh, Caleb-are you listening? I am counting on you:)

When we do make French toast at home, it is usually Baked French Toast. It’s so easy and everyone loves it, including myself. I recently decided to change things up by making Baked French Toast Muffins. Instead of making the French toast in a big pan, I made it in muffin tins. Bonus points for cuteness, right?

Ingredients

For the Muffins:

For the Cinnamon Streusel Topping:

Instructions

  • In a medium bowl, whisk together the milk, eggs, sugar, vanilla, and cinnamon.

  • Grease a 12 cup muffin tin. Add about 1 cup of bread cubes to each muffin cup. Carefully pour egg and milk mixture evenly over each muffin tin. You may need to press down on the bread cubes after you pour a little mixture and then pour more. Pour slowly or you will have a mess. Or you can combine everything in a large bowl and then fill the muffin cups. Cover the muffins with plastic wrap and refrigerate for 2 hours or up to overnight.

  • When ready to bake, preheat the oven to 350 degrees F. To make the cinnamon streusel, in a small bowl, combine butter, brown sugar, flour, cinnamon, and salt. Mix together with your hands, until you have a crumbly mixture. Remove the muffins from the refrigerator and sprinkle the muffins evenly with the streusel topping.

  • Bake for 25 minutes or until tops are golden brown. Let muffins cool for 5 minutes. Remove from pan and serve with butter and maple syrup, if desired.

FAQs

What is the trick to French toast? ›

Use higher fat milk; follow the milk to egg ratio provided in the recipe; use thick slices of bread and soak on both sides until well saturated; use a large enough pan and preheat on medium heat; cook French toast in melted butter for richer flavor, but keep an eye on the butter and heat level so as not to over-brown ...

Should French toast have more eggs or milk? ›

Whatever you decide on, the ratio of liquid to egg will still be about ¼ cup liquid to one egg, and one egg per two slices of bread. So, if you want to make four slices of French toast, you would need four slices of bread, two eggs, and ½ cup milk.

Is whipping cream or milk better for French toast? ›

A creamy custard is the key to incredible French toast, so skip the watery skim milk and go for whole milk or half-and-half. Straight heavy cream turns French toast into dessert, so lean that way if you're looking for decadence.

Why does my homemade French toast taste like eggs? ›

If the balance is off and you include too many eggs or not enough milk, the finished French toast will have a scrambled egg-like flavor. When scaling this recipe up or down, keep in mind that you need 1/4 cup of milk for every egg.

Why is French toast unhealthy? ›

French Toast is a delicious breakfast entree that is loved by many. With this in mind, french toast can be very calorie dense with high amounts of added sugar and fat. But, it can be tweaked to reduce the sugar and fat content while adding some fiber to your breakfast - yay!

Should I cook French toast in butter or oil? ›

Butter gives French toast a deep richness and comforting quality, which are what we crave on mornings we sizzle this breakfast staple. To prevent burning or smoking, use a combination of butter and oil in the pan to cook the toast.

What happens if you soak French toast too long? ›

The first is using fresh bread, which soaks up too much of the egg mixture and doesn't cook through, remaining eggy and soggy in the middle. Leaving the bread in the egg mixture for too long is another route to soggy French toast.

Should you toast your bread before making French toast? ›

Use stale bread or toast the bread until it's golden-brown. It needs to be sturdy to hold up to the egg mixture. If the bread is fresh from the bag or you toast it too lightly, the finished dish will be soggy. Soak the toasted or untoasted bread for about 10 seconds per side to achieve the optimal texture.

Should I leave bread out overnight for French toast? ›

Ideally, the bread should be slightly stale. A drier bread will soak up all the custard. Bread can be left out with the wrapper open the day before cooking. If you find yourself in a pinch, dry your bread slices in a 275°F oven for 10 minutes before soaking them in the custard.

Is it okay to make French toast without vanilla extract? ›

Your French bread will be perfectly delicious if you decide to just skip over the vanilla and continue making your French toast as-is. However, if you'd like to incorporate a little more flavor into the dish, you can try replacing the vanilla with a substitute like maple syrup, bourbon, or almond extract.

What's the best bread to use for French toast? ›

Look for bread that is labeled “hearty,” “thick-cut,” or “Texas toast.” Thin slices are more likely to collapse when soaked. You can also opt for a pullman loaf and slice the bread yourself to your desired thickness. Sliced wheat bread also makes good French toast, but might require a little extra soaking time.

Why is restaurant French toast so much better? ›

According to the chef, the difference comes down to two main elements: the use of high-quality yeasty bread and allowing it time to properly soak. While you can use regular old white bread at home, you may want to give yours an upgrade — try subbing in thick-cut slices of brioche instead.

How do you keep French toast from falling apart? ›

Dry Bread Is Your Friend

The original point of French toast or pain perdu was to use up leftover bread. It was, in essence, no longer “lost bread,” but found in its new purpose. The bread should be dried out, without any doubt. Dry bread helps the eggs soak in without the entire piece collapsing.
