These gluten-free sausage balls are such a treat. They're so adaptable that you can change them up with different sausages, cheeses and herbs and spices. Don't forget to add your own dipping sauces for variety too.

I can't express enough how you need to double or triple batch make these. They're so easy to pull out of the freezer for unexpected guests, as a tasty snack, or if you're running short of time in making a complete dinner.

INGREDIENTS IN GLUTEN-FREE SAUSAGE BALLS

Gluten-free biscuit mix - Use a gluten-free biscuit mix of your choice to bind all the ingredients together. I used gluten-free Bisquick but you can also try King Arthur gluten-free baking mix.

Cheese - Grated cheddar works well. You can however use a combination of cheeses. I would avoid harder cheeses.

Sausage - Use 1 lb. gluten-free sausage chopped. A plain sausage works best as we add in herbs and other flavors. If you use a seasoned sausage, then adjust the flavors added.

Milk - I used whole milk. If your sausage balls are not binding together, you may need to add a bit more.

Herbs - 1 tsp dried mixed herbs of your choice. I used a mix of thyme, marjoram, oregano, parsley, sage, and basil.

Coriander - Use some ground coriander for flavor.

Garlic - I used granulated garlic.

Parsley - Nice to add for serving but optional.

EQUIPMENT NEEDED FOR GLUTEN-FREE SAUSAGE BALLS

Baking sheet - You can use these aluminum baking sheets.

Mixing bowls - I love these glass mixing bowls.

Parchment paper - Unbleached parchment paper works well for mess-free baking.

HOW TO MAKE GLUTEN-FREE SAUSAGE BALLS

  1. Preheat the oven to 350 F. Line a baking sheet with parchment. In a bowl, combine the gluten-free biscuit mix, grated cheddar, dried herbs, coriander, and granulated garlic.
  2. Add milk and stir.
  3. Add chopped sausage and stir.
  4. With wet hands, shape into small 11/2-inch balls and place on parchment paper. Bake for 20 minutes, serve with chopped parsley.

TIPS FOR MAKING THE BEST GLUTEN-FREE SAUSAGE BALLS

Roll them correctly - Make sure to roll them tight so they don't fall apart when baking.

Use wet hands to shape - For this recipe, you are going to need to get your hands moist to roll these sausage balls.

Cheese type matters - Try using a semi-hard cheese or else the sausage balls will flatten out.

WHY WON'T MY SAUSAGE BALLS STICK TOGETHER?

You may not have compressed them enough and be sure to use wet hands.

WHY DO MY SAUSAGE BALLS FLATTEN OUT?

It could be the cheese you used. Semi-hard cheeses seem to work best. I have not tried it, but parmesan does not work well.

CAN I MAKE ALMOND FLOUR SAUSAGE BALLS INSTEAD OF USING THE GF PANCAKE MIX?

I have not tried it. But you can experiment with it. Almond flour is a high-fat ingredient so results may vary. I would suggest you use a flour blend.

CAN I MAKE GLUTEN-FREE SAUSAGE BALLS WITHOUT BISQUICK?

I used this gluten-free Bisquick but you can also try King Arthur gluten-free baking mix. As long as it's a gluten-free biscuit mix it should work. If you prefer you can make a homemade gluten-free Bisquick too.

HOW DO I STORE GLUTEN-FREE SAUSAGE BALLS?

You can store them in the refrigerator to use later. They will however lose their crispiness. Alternatively, freeze them raw or cook them and then freeze them. Freeze them in an airtight container to avoid freezer burn.

CAN YOU REFRIGERATE SAUSAGE BALLS BEFORE COOKING?

Yes, you can. Make them ahead of time and then place them in the fridge in a sealed container unshaped. You can also shape them and then only bake them when your guests arrive.

CAN I FREEZE THESE GLUTEN-FREE SAUSAGE BALLS?

Yes, you can freeze the sausage balls. One of two ways. Either freeze them raw and shaped. Or bake them, let them cool and then freeze them. You can freeze them for up to 3 months.

CAN YOU MAKE GLUTEN-FREE SAUSAGE BALLS WITHOUT MEAT (VEGAN)?

I have not tried it but get your favorite vegan sausage and try it. Just make sure the vegan sausage is gluten-free. The cheese and milk would also need to be substituted for vegan products. We cannot guarantee great results, however, since it's a lot of substitutions. Let us know if you give it a try though!

WHAT CAN YOU SERVE WITH THESE GLUTEN-FREE SAUSAGE BALLS?

You can serve these with other gluten-free appetizers if you're entertaining. Alternatively, serve them with a side salad and some french fries, or even put them on top of some gluten-free pasta with a nice sauce to make a quick weeknight meal.

WHAT DIP CAN YOU SERVE WITH THESE GF SAUSAGE BALLS?

I like to use mayonnaise, sour cream, and Greek yogurt. But it is entirely up to you and your taste buds so experiment with assorted flavors.
